A spring/summer lunch menu item. The dipping sauce is made from ayu (sweetfish) nikogori (gelatin broth), letting you fully enjoy the ayu 🐟. Halfway through, you add ayu dashi for a flavor change. To finish, rice topped with ayu flakes is served ochazuke-style with dashi. It was gentle on the stomach and delicious.
